Penne Rigate with Bar-B-Q-ed Chicken
serves 4, easy to make

ingredients:
  • 4 chicken breast fillets, cubed

  • 1 big onion, diced

  • 1 red bellpepper, diced

  • 3 carrots, diced

  • 2-3 garlic cloves, finely chopped

  • 4 EL very good tomato purre

  • 5 or more spoons of honey (pref. forest honey)

  • 5-7 spoons of sweet and hot chili sauce

  • jalapenos to taste

  • 2 spoons of soy sauce

  • 2-3 tomatoes oder 6-8 Cherrytomatoes, chopped

  • Salt, black pepper

  • Penne Rigate

  • Olive Oil

preparation:

Place onions, garlic, tomatoe purre, honey, chili sauce, jalapenos and soy sauce, in a large non-reactive bowl, mix thoroughly and add the chicken to marinade. Let it sit covered in the fridge for an hour.

Pour the mix into a heated (and really hot) pan and stir fry until liquid evaporates and the dish starts caramelizing. Eventually add some more honey and salt. Reduce heat a bit and go on stirring until everything is dark brown, but not black ;-)

Season to taste and mix with the pasta.

 

Serve on warm deep pasta plates and enjoy with a glass of Simply Sunshine Sparklinjg Shiraz.
